Prokupac

Prokupac is the king of Serbian red grapes.

It produces medium-bodied, elegant wines with flavors of red cherries, dark berries, and forest floor.

Prokupac is often compared to a mix of Pinot Noir and Cabernet Franc.

Serbian Specialities

  • Ćevapi & Pljeskavica
    Ćevapi are small, grilled minced-meat sausages. Pljeskavica is a larger, flattened meat patty (hamburger). Both use a spiced ground meat mixture (beef, lamb, or pork), and served with chopped onions and spreads like ajvar or kajmak.
  • Pečenje (Roasted Suckling Pig)
    This crispy, fatty roast pig is a Serbian staple. The high acidity of a fruit-forward Prokupac cleanses the palate after every rich, fatty bite.
  • Lamb Kapama (Slow-Cooked Lamb)
    A stew of lamb and green onions. The gamey, herbaceous flavors harmonize perfectly with the berry notes and tannins of the wine.
  • Podvarak
    A stew made of sour cabbage and meat (pork or bacon). A structured Prokupac handles the complex acidity of the fermented cabbage.
  • Zec sa šargarepom
    Braised rabbit with carrots. A richer, dark-sauce variation is prepared with red wine and spices, is called Divlji zec u crnom vinu (hare in red wine).
